Ice Cream Gallery is the brainchild of Louise Chng, a food scientist-turned-transactional artist. During her undergraduate days, she was fascinated by the possibilities of molecular gastronomy and cooking. Like Heston Blumenthal and Ferran Adria, she also wanted to do something really wacky with food, and share it with everyone. But for her, it wasn't enough to be able to taste the creations of these culinary geniuses - she wanted to try her hand at making all that stuff. She saw it not just as a fulfillment of her inner food scientist's curiosity, but also as a novel activity that could get people talking. So Ice Cream Gallery was born.
